CURRENT RESEARCH TOPICS:
Probiotics, postbiotics, synbiotics – selection of candidate probiotic lactic acid bacteria (LAB) from different habitats. In vitro assessment of their role against pathogens. Mode of beneficial action for health and well-being.
Human/animals Microbiome as factor for health and diseases
Implementation of beneficial bacteria as bio-protective starters/adjuncts
May the beneficial microbes/their active metabolites help new therapeutic and prophylaxis scheme.
More than 20 years research devoted to:
Lactic acid bacteria, probiotics and synbiotics. Molecular biological studies of lactic acid bacteria (LAB): Isolation and characterization of strains from traditional and poorly studied habitats: dairy products (yoghurt, cheese, cumis, kefir), non-dairy fermented foods (boza, sour doughs, sausages, etc.). Human-origin strains - vaginal and breast milk strains. Modern molecular genetic studies of LAB and species identification (by PCR fingerprinting, DNA hybridisation methods, sequence and phylogenetic analysis, typing and genetic passportisation with highly discriminative methods) in line with the most recent changes in their classification and taxonomy. Evaluation of lactic acid microbiota of unique fermentation products for the country and the world –“ katak” and “green cheese”.
Characterization of the molecular mechanisms of beneficial action and probiotic potential of LABs from different ecological niches as natural regulators of healthy homeostasis. Probiotics – In vitro bbiological activity and in situ evaluation of technologically relevant properties of LABs. Characterization of the potential of different lactic acid bacteria to participate as starter/probiotic additives for application in functional foods and medicine.
Food safety, animal and plant health by new alternative approaches (bacteriocins antimicrobial peptides, etc.)
